Raspberry Lime & Mint Mojitos

Okay, so technically it is now autumn, and whilst I am beyond excited for scarves, hot chocolates and oversized coats, I am not willing to let one thing slip just because of a small matter of seasonality - my mojitos. I have done my fair share of cocktail drinking this summer, so I thought I'd turn my hand to a bit of making and see if I could master the art of the mojito. Having bought some raspberries, I thought it might be a nice idea to make my own little recipe. I am no expert, but this super simple little step-by-step guide makes  a really fruity and refreshing tipple - and if I can do it, it must be fool proof!

First for the ingredients. I made mine one by one to try to get the taste just right, so quantities are up to you and can be done to your own personal taste. Per drink, I used:
- Half a handful of fresh mint leaves
- Half a handful of raspberries
- A dash of lime cordial
- Two teaspoons of sugar
- A wedge of lime
- A few pieces of ice
- A measure (or two) of white rum
- Soda water

Step 1 - Pop your raspberries into a glass, and mash with the back of a spoon into a pulpy consistency.

Step 2 - add your sugar to the pulpy mess and mix together.

Step 3 - Add ice.

Step 4 - Finely chop the mint and add to the glass, then use the back of your spoon again to crush the mint up a bit to release more flavour.

Step 5 - Add a measure or two of the fun stuff and a dash of lime cordial to taste.

Step 6 - Fill to the top with soda water, then add a squeeze of fresh lime, before dropping the wedge in your drink. Lastly, add a sprig of mint and a straw to finish it all off with a flourish!
